Pumpkin spice lovers, this is for you!

So I am by no means perfect when it comes to me sustainability but my goal is to keep educating myself and my audience on how small choices can lead to big impacts. As you can see from this photo, I am not perfect. But up until COVID-19, I was almost perfect with bringing my reusable cup every time when going to a coffee shop. To try and limit the amount of coffee that I buy in disposable cups, I decided to make my own pumpkin spice latte, in attempt to not cave and buy one from Starbs! If you are like me and love fall flavored coffee, save yourself the money and plastic waste by using this recipe!

 

Homemade Coffee Creamer: If you aren’t dairy free, use half and half and go to the next step. If you are dairy-free like me, lets make our own rich coffee creamer. 

  1. soak 1 cup of cashews in a mason jar with water for 3 hours.
  2. rinse and drain cashews.
  3. blend soaked cashews with 1 and 1/4 cups of your favorite plant milk for one minute, or until it becomes completely smooth!

 

Pumpkin Spice flavor:

  1. In a saucepan over medium heat, add:
    1. 2 teaspoons of pumpkin spice (I use Trader Joe’s)
    2. approximately 3.5 tablespoons of your favorite sweetener. I used coconut sugar!
    3. 1/4 cup pumpkin puree
    4. 1/2 tablespoon vanilla extract
  2. mix until all ingredients are combined
  3. pour into mason jar
  4. add cashew creamer
  5. SHAKE SHAKE SHAKE
  6. Add creamer to some coffee and enjoy!
